Roshni’s Chicken Curry Recipe

Ingredients:

  1. Chicken -1 kg cubed bite size pieces
  2. Onions -3 large finely chopped
  3. Ginger &Garlic paste – 2 teaspoons
  4. Turmeric powder- ¼ teaspoon
  5. Kashmiri chilli powder- 2 teaspoon
  6. Corriander powder- 4 teaspoon
  7. Garam masala- 1/2 teaspoon
  8. Cumin powder- 1/2 teaspoon
  9. Kasuri Methi (dried fenugreek leaves)- 1/2 teaspoon
  10. Tomato puree -8 tablespoons
  11. Fresh Cream -3 tablespoons
  12. Oil of your choice- 4 tablespoons
  13. Salt

Cooking Method:

  1. Heat oil in a deep pan. Once oil is hot, add in the chopped onions. Saute until translucent and add in the ginger garlic paste. Keep the heat at medium.
  2. Saute till the rawness of ginger & garlic disappears and the onions are golden brown.
  3. Add in ingredients3,4,5,6,7and 8. Saute for a minute and add tomato puree. Saute for 2 minutes.
  4. Add the chicken pieces and sauté for 2 minutes till the chicken pieces are sealed.
  5. Add a cup of hot water into the pan and mix well. Also add the desired amount of salt at this stage. Let the curry simmer in medium to low heat for 15 minutes. Give it a stir every 5 minutes.
  6. Once the chicken is cooked, add a pinch of fenugreek leaves, mix well and finally add the fresh cream.
  7. Give it a nice stir and the curry is ready to serve.
